We roll into Green River, UT, which turns out to be about as desolate economically as the landscape is visibly. Fortunately there's a food market where we can grab some staples (such as limes and ice). Interestingly, ice is sold in blocks out there in the desert. Makes sense....
There's a bar, and a pizza joint, so we think maybe we'll head in there for a bite after we situate ourselves at the campground.
(Here's the view from our campsite:)
But once you've settled, it's hard to get the momentum to get back on the road, even if it is only for a few blocks.
So I rummaged in the trailer to see what I could throw together for my supper.
- Tortillas, Lettuce, & Salsa from the Denver CO Farmers' Market
- Avocado & Cilantro from the Natural Grocer
- Leftover grilled steak from the Athens' GA Farmers' Market
- Homemade sour cream from Homeland Creamery, NC
I'll be honest. It wasn't the most delicious thing. There are a couple of reasons.
- I didn't take the time to heat anything.
- I put on a LOT of lettuce, but not enough salsa to dress it all.
- It needed cheese.
But it was healthy, fresh, and very convenient, and my only real option for a good meal that night.
